About the Position The Chef role is central to kitchen operations at Modern Curry and is responsible for leading the preparation and execution of high-quality, flavourful curry dishes that define the restaurant’s modern, build-your-own concept. Working in a fast-paced, high-volume environment, the Chef oversees daily food production, ensures consistency across customised orders, maintains rigorous food safety and hygiene standards, and supports efficient service during peak lunch periods. This position plays a vital part in upholding the restaurant’s reputation for bold, authentic tastes and reliable quality while contributing to menu refinement, team development, and smooth kitchen workflow. The Chef works closely with the kitchen team and front-of-house staff to deliver seamless, positive dining experiences for every guest. Key Responsibilities Plan, prepare, and oversee the cooking of a wide variety of modern and traditional curry dishes, ensuring consistent flavour, spice balance, quality, and presentation for every customised order. Supervise and coordinate kitchen staff to manage efficient workflow during busy service periods, maintaining speed, accuracy, and high standards without compromising on taste or visual appeal. Maintain strict compliance with food safety, hygiene, and occupational health and safety regulations, including proper handling, storage, temperature control, and allergen management. Manage kitchen inventory, assist with ordering, implement portion control, and minimise waste to support cost efficiency and smooth daily operations. Train, mentor, and support junior kitchen staff and new team members on recipes, cooking techniques, assembly processes for build-your-own bowls, and kitchen best practices. Collaborate with management on recipe development, seasonal specials, and refinements to keep the menu fresh, appealing, and aligned with customer preferences and dietary needs. Monitor and maintain the cleanliness, organisation, and operational readiness of the kitchen workspace and equipment at all times. Work constructively with front-of-house staff to address customer feedback or special requests promptly, contributing to continuous improvement in food quality and service. Requirements Australian citizens and permanent residents are encouraged to apply. Certificate III in Commercial Cookery and Certificate IV in Kitchen Management, or a recognised equivalent qualification. Minimum of one year of experience working as a Chef in a busy commercial kitchen environment (experience in Indian, Asian, or high-volume quick-service restaurants is highly regarded). Strong technical skills in curry and Indian-inspired cuisine preparation, including spice management, flavour balancing, large-scale cooking techniques, and maintaining consistency in a build-your-own meal format. Excellent leadership, interpersonal, and communication skills, with the ability to motivate a team, delegate effectively, and collaborate constructively in a fast-paced, high-volume setting.
