About the Position: The Commi Chef plays a vital supporting role in the kitchen at Rosa’s Canteen, assisting senior chefs with the preparation and execution of high-quality Italian dishes during busy services. This position is essential for maintaining the restaurant’s standards of freshness, flavour, and presentation in a fast-paced, high-volume environment. The successful candidate will contribute to the team’s ability to deliver consistent, authentic Italian cuisine while developing their skills in a respected Melbourne establishment. Key Responsibilities: Prepare and portion ingredients, including washing, peeling, chopping vegetables and fruits, seasoning meats, and making basic sauces, stocks, and dressings. Assist with the preparation and cooking of Italian dishes such as house-made pastas, risottos, grilled proteins, salads, and seasonal specials under the guidance of the chef de partie or head chef. Ensure all food items are prepared to the highest standards of quality, taste, and presentation before service. Maintain cleanliness and organisation of the kitchen workstations, equipment, and storage areas in line with food safety and hygiene standards. Receive and check deliveries, manage stock rotation, and report on inventory levels to minimise waste. Support the kitchen team during peak service periods, including plating dishes and collaborating effectively to ensure smooth operations. Follow recipes, portion controls, and menu specifications while contributing ideas for seasonal menu development. Requirements : Australian citizens and permanent residents are encouraged to apply. Diploma in Hospitality (Commercial Cookery) or at least 3 years of relevant experience. Minimum 3 years’ experience in a professional kitchen, preferably in Italian cuisine or similar full-service restaurants. Excellent teamwork, communication, and interpersonal skills, with a positive attitude and commitment to delivering high-quality service.
