The Role An exciting opportunity exists for an experienced Head Chef to lead the kitchen at one of the Gold Coast's high‑profile Mediterranean seafood restaurants. This is a senior, hands‑on leadership role within a fast‑paced, high‑volume environment, with full responsibility for the day‑to‑day performance of the kitchen across lunch and dinner service. The role requires a technically strong chef who can confidently run a busy a la carte operation with a strong focus on premium seafood, classic Mediterranean execution, and consistency of delivery. As Head Chef, you will set the standard across all sections - overseeing service, prep, production, food safety, and quality control - while maintaining a calm, organised presence during peak trade. You will lead, mentor, and develop a professional brigade, driving accountability, discipline, and a positive kitchen culture. Strong commercial awareness is essential, including food costing, portion control, supplier management, stock control, and labour optimisation. You will work closely with ownership and senior management to uphold brand standards, manage budgets, and continuously refine systems and processes. Skills and Experience The successful candidate will be expected to possess, but not be limited to, the following attributes: Minimum of 5 years' experience in a Head Chef role in a high volume and elevated venue, strong time management skills and the ability to work effectively under pressure Full weekend availability - Mon & Tues will be your days off Exceptional execution and culinary production service, ability to multitask, and has an understanding of food costing, labor control, and kitchen systems Excellent leadership and communication skills, with a collaborative approach, positive attitude, and strong work ethic - Running the pass and execution of service is imperative Relevant qualifications in Commercial Cookery, as well as certifications in food safety and hygiene Benefits and Culture Competitive salary - $90K to $100K Super (based on experience) Stable, long-term role with an established group - 2 Days off in a row Award-winning company with plans for more venues to come Autonomy to lead and shape kitchen operations Brisbane CBD location, close to public transport This venue is aiming for a Chef's Hat and more.
