We are a team of qualified and experienced Chefs, Cooks and Support Staff who cater to the local need for good and authentic food. We are currently looking for qualified and experienced Chefs and Cooks to join our team to meet the ever-increasing demand for good food. Role of a Chef: · Full operational knowledge of all recipes, standards, portion sizes and presentation styles of dishes produced within the kitchen. · Assist in the creation of menus (considering food and labour costs). · Discuss food preparation issues with the Head Chef and monitor the preparation and presentation of the dishes. · Maintain stock levels according to the requirements. · Ensure compliance with food hygiene standards and health and safety requirements. · Check the freshness and quality of ingredients and ensure food prepared in the kitchen is of the highest possible standards. · Supervise and train any junior kitchen staff. · Deal with food complaints efficiently and demonstrate strong organisational skills. · Prepare curries, sauces, and desserts as and when required. · Able to demonstrate a thorough understanding of traditional Northern Indian cuisine including desserts. Role of a Cook: · Cooking quality curries and other meal items · Prepare and cook consistently high standard meals under supervision of Chef/Head Chef. · Seasoning and plating of food adding with herbs and spices · Continually update culinary knowledge and keep abreast of emerging trends. · Maintain kitchen equipment to an excellent standard. Ensure the hygiene of food preparation areas. · Debrief at the end of each shift with the Chef. · Work productively in a fast-paced, busy work environment, dealing with a high volume of cover in a short period. · Knowledge of storing food and adjust temperatures. · Ability to plan menus in conjunction with the Chef/ Head Chef. Tandoor Cook/Chef: · Operating a traditional tandoor oven, cooking such items as meat and bread. Preparing Tandoori curries, sauces, and desserts as per standard and style set by the Head Chef(s). · Regulating temperatures of the tandoor, ovens, grills, burners/pans, and other cooking equipment. · Able to demonstrate a thorough understanding of traditional Northern Indian cuisine including desserts that are prepared in Tandoor. · Ensure the correct preparation and presentation standard of the dishes is always maintained. · Demonstrating tandoor techniques and cooking procedures to other staff if required. · Ensure all the equipment used in the section is in good condition and hygienically cleaned before and after use. Qualification and Experience Required: · Certificate 3 or 4 in Commercial Cookery or Overseas equivalent · Minimum 2 years relevant work experience in a commercial kitchen · Knowledge of North Indian Cuisine is preferred.
