Our commitment is to provide our guests with an authentic and memorable dining experience. About the Role We are seeking a full-time Chef to join our talented culinary team at Akira Sushi Bowral. This is a hands-on position responsible for preparing and presenting high-quality sushi, Japanese dishes, and other menu items in accordance with our restaurant’s standards. The successful candidate will work closely with our kitchen team and report directly to the Head Chef. You will play an important role in maintaining food quality, consistency, kitchen efficiency, and delivering an exceptional dining experience for our customers. Some of the key responsibilities are: · Prepare and cook a wide range of authentic Japanese dishes, including sushi, sashimi, hot dishes, and seasonal menu items while maintaining high standards of taste, quality, and presentation. · Create and prepare sushi menu items using a variety of fresh seafood, vegetables, sauces, and traditional Japanese cooking techniques, including maki, nigiri, and other specialty sushi varieties. · Prepare, cook, and present hot Japanese dishes such as tempura, teriyaki, donburi, and other restaurant specialties in accordance with established recipes and quality standards. · Assist the Head Chef with menu planning, food costing, seasonal menu development, and the creation of innovative dishes while considering ingredient availability, quality, and budget requirements. · Select, inspect, and prepare high-quality ingredients, including fresh seafood, fish, vegetables, and other produce, ensuring freshness and compliance with restaurant standards. · Apply appropriate food preservation techniques, including storage, freezing, and preparation methods to maintain food quality and safety. · Assist with the selection, onboarding, and training of kitchen staff, providing guidance on food preparation techniques, kitchen procedures, food safety practices, and restaurant standards to maintain consistency and quality. · Order, receive, and inspect food supplies from suppliers and vendors to ensure quality and availability of ingredients. · Assist with inventory management, including monitoring stock levels and replenishing ingredients and kitchen supplies as required. · Maintain a clean and safe kitchen environment by ensuring compliance with food safety regulations, hygiene standards, WHS requirements, temperature controls, and proper maintenance of equipment and work areas. · Communicate effectively with kitchen, front-of-house staff, and management regarding food preparation requirements, service issues, and operational improvements · Respond to customer feedback and assist with implementing improvements to food quality, service standards, and menu offerings. · Stay updated with industry trends, Japanese culinary techniques, and new food concepts to support continuous improvement and menu innovation. · Manage and coordinate daily kitchen operations, including food preparation, portion control, cooking, plating, and service delivery to ensure all meals meet quality, presentation, and timing standards. About You · Minimum 3 years of experience working as a Chef in a fast-paced sushi restaurant or Japanese cuisine environment. · Demonstrated skills and experience in handling fresh seafood and fish, including proper preparation techniques and advanced knife skills. · Certificate IV in Commercial Cookery or a higher relevant culinary qualification · Strong knowledge of Japanese culinary techniques, sushi preparation, and food presentation standards. · A passion for Japanese cuisine with a commitment to maintaining precision, quality, and consistency in every dish. · Ability to work efficiently in a fast-paced kitchen while maintaining excellent attention to detail and high standards of food preparation. · Strong understanding and commitment to food safety, hygiene, and workplace health and safety requirements. · Excellent time management skills with the ability to prioritise tasks and meet service expectations. · A positive attitude with a willingness to learn, develop skills, and participate in ongoing training programs. · Strong teamwork and communication skills, with the ability to collaborate effectively with chefs and kitchen staff. · Commitment to delivering exceptional hospitality and maintaining premium dining standards in a guest-focused kitchen environment.
