Applicants must have a Certificate IV in Commercial Cookery relevant to AQF, as well as at least 2 years' experience in similar role. Duties and Responsibilities: Prepare and cook the food with special dietary requirements Planning menu and develop menus, including weekly specials, in consultation with the Director/Restaurant Manager. Prepare food according to the menu and make sure every item is available. Manage food costs and portion control to maximize profitability while maintaining quality. Supervise and coordinate kitchen operations during service periods. Train, supervise trainees and other kitchen staff. To efficiently manage stock, conduct stock takes and put FIFO (First In, First Out) stock rotation. Follow Correct portion size. Ensure consistency, quality, and presentation of all dishes. Monitor inventory levels, order supplies, and manage food storage to minimize waste. Demonstrate advanced cooking techniques and equipment to staff. Liaise with Restaurant Manager regarding catering, functions and special requirements. Garnishing and presentation of food. Ensure compliance with food safety standards and WHS regulations.
