Mornington Peninsula What the Senior Head Chef will do each day A la carte mediterranean seafood cuisine with capacity for 70 covers; functions including weddings up to 50 people sit-down; cocktail functions up to 100 guests. The venue operates Wednesday night, Thursday, Friday, Saturday (all day), and Sunday lunch.Typically, kitchen staff work 4 days on / 4 days off, or 5 days on rotation. Shifts include doubles on Thursdays, Fridays, and Saturdays with Sunday lunch off. Lead and manage the kitchen team including sous chefs and apprentices. Oversee food preparation and menu execution focused on Mediterranean seafood dishes. Manage inventory, food cost control, and supplier relationships. Ensure hygiene, health, and safety compliance within the kitchen. Coordinate kitchen operations to support busy service including weddings and functions.
