Regal Bight Fisheries is seeking an experienced Seafood Filleter to join our team full-time in our Port Adelaide processing facility. We work with premium South Australian seafood and supply wholesale and retail customers across the state. This is a physical, hands-on role suited to someone confident with knife work and comfortable working in a busy factory environment. We operate under strict HACCP, GMP and food safety standards within a fast-paced processing environment. Our processing facility operates alongside a retail fish market, meaning your work will be visible to customers. Professional presentation and the ability to respond courteously to customer questions when required are essential. Role Responsibilities: Filleting and trimming fish to high quality standards Maintaining strong yield and presentation Following food safety and hygiene procedures Stock rotation (FIFO) Cleaning and maintaining work areas Supporting packing and production as required Requirements: Previous seafood filleting essential Strong knife skills Physically fit and reliable Able to work in a cold environment Good attention to detail Well-presented and professional Friendly and able to communicate confidently with customers Available Monday to Friday (early starts approx. 6am–2pm) If you are a skilled filleter who takes pride in quality and consistency, we encourage you to apply.
