The Shellharbour Club is a market-leading hospitality destination, supporting a membership base of over 26,000 and growing . We operate 700 seats across multiple dining spaces , on a typical Saturday Night producing over 900 covers, all driven from one central kitchen servicing 3 outlets as a collective, performance-focused unit, alongside dedicated functions and events operations. This is not a single-outlet venue. It is a coordinated, volume-driven brigade environment where structure, standards and leadership matter. We are seeking a passionate, ambitious and capable Chef De Partie to join our brigade and support the Sous Chef and Executive Chef in delivering excellence at high volume. The Role Full-time Chef De Partie reporting to the Sous Chef and Executive Chef Work within a 20 brigade across outlets and functions Operate structured lunch and dinner services, including split shifts Oversee multiple outlets during peak trade and major events Drive consistency, speed and precision across all services Contribute to menu development within defined review timeframes Demonstrate strong organisation, workflow management and forward planning Maintain strict WHS and Food Safety compliance standards Step into leadership in the absence of the Sous Chef Supplier engagement and external meetings are managed at a senior level, allowing you to focus on operational delivery and team performance. Who This Role Suits A strong Commis/ Demi Chef ready to step into a larger brigade. A capable CDP ready to make their mark and grow further. A Head Chef or Sous Chef seeking a more balanced role while mentoring and developing younger chefs. The Support Around You You will work alongside dedicated Marketing, Human Resources and Finance divisions, as well as senior operational leadership. This structure removes unnecessary administrative pressure and allows you to focus on the delivery of food, service and team development. Rosters are prepared by a dedicated rostering team and released three weeks in advance , providing stability and forward planning to manage both work and life balance.
