Role Overview: They are seeking experienced Butchers, Smallgoods Makers, and Beef Boners to join their dedicated production team. The successful candidates will be responsible for preparing, cutting, and processing meat products to the highest standards of quality and safety. Key Responsibilities: Break, trim, and prepare carcasses and primal cuts according to specifications. • Operate knives and machinery safely and efficiently in accordance with company procedures. • Produce, cure, and smoke smallgoods and specialty meat products. • Maintain cleanliness and hygiene standards in all work areas. • Ensure compliance with food safety, HACCP, and WHS requirements. • Work collaboratively within a team to meet production schedules and quality targets. • Assist with training and mentoring apprentices or less-experienced staff as required. Candidate Profile: Proven experience as a Butcher, Smallgoods Maker, or Beef Boner in a retail or wholesale environment. • Comprehensive understanding of meat quality, yields, and cutting techniques. • Commitment to high standards of hygiene, food safety, and workplace safety. • Strong work ethic with the ability to work both independently and as part of a team. • Physically fit and able to perform repetitive manual tasks. • Good communication skills and a positive, can-do attitude. Qualifications & Experience Qualification Requirement: AQF Certificate III (or equivalent) in meat processing (retail butchery) or a related field. • Experience Requirement: At least two years of relevant experience may substitute for formal qualifications in some cases. In addition, relevant on-the-job training may be required after qualification. • Typical Pathway: Completion of a Certificate III in Meat Processing (Retail Butcher), or equivalent apprenticeship program, combined with practical industry experience.
