Job Overview We are seeking a passionate and experienced Chef to lead our kitchen operations, mentor our culinary team, and maintain exceptional standards of food quality and presentation. The successful candidate will have a hands-on approach, a passion for Modern Australian, Italian, and Mediterranean cuisine, and the ability to build a positive and efficient kitchen culture. Key Responsibilities Oversee and participate in the daily preparation and production of all menu items, including breakfast, lunch, entrées, mains, desserts, and function catering. Plan, develop, and update menus based on customer demand, seasonal produce, market trends, and business objectives. Manage ordering, inventory control, portion control, stock rotation, waste minimization, and food storage procedures. Monitor food costs, menu performance, and profitability. Analyze sales trends and customer preferences while developing promotional menu items to maximise revenue. Maintain accurate stock levels and ensure all kitchen equipment is properly maintained, reporting any additional requirements to management. Ensure all food is prepared, cooked, and presented to a consistently high standard and served promptly. Operate and maintain kitchen equipment safely and efficiently. Train, mentor, and supervise kitchen staff, including onboarding new team members. Implement and maintain Food Safety and HACCP procedures throughout all kitchen operations. Ensure compliance with food hygiene, workplace health and safety, and quality assurance standards. Review kitchen reports, audits, and documentation to identify and address operational or compliance issues. Continuously improve kitchen systems, workflows, and operational efficiency. What We're Looking For Proven experience in Modern Australian, Italian, and Mediterranean cuisine, including function and catering operations. Previous experience working as a hands-on chef in a busy restaurant or café environment. Strong knowledge of food preparation techniques and the ability to consistently produce high-quality dishes. Excellent understanding of food safety, hygiene, and kitchen compliance standards. Professional presentation and strong work ethic. Willingness to learn new cooking techniques and continually develop culinary skills. Essential Requirements Certificate IV in Commercial Cookery/Kitchen Management or higher. Minimum of two years' experience as a Chef. Excellent communication, leadership, and organizational skills. Ability to work effectively in a fast-paced team environment.
