Role Purpose The Cook / Chef role is responsible for preparing, cooking, and presenting quality meals that meet venue standards, customer expectations, and food safety requirements. The position supports efficient kitchen operations across daily service, peak trading periods, functions, and seasonal demand. This role contributes to APOLLO BAY BREWING PTY LTD by maintaining consistent food quality, supporting kitchen workflow, controlling wastage, assisting with stock management, and working collaboratively with kitchen, front-of-house, and management teams. Key Responsibilities Cook Responsibilities Prepare ingredients, sauces, garnishes, and menu items before service. Cook meals according to recipes, portion controls, and venue standards. Maintain food quality, freshness, taste, and presentation during service. Follow food safety, hygiene, allergen, and sanitation procedures. Store, label, rotate, and handle food safely and correctly. Clean workstations, utensils, equipment, and kitchen areas as required. Report stock shortages, equipment faults, hazards, and service issues. Chef Responsibilities Plan and organise daily kitchen workflow, preparation, and service delivery. Supervise cooking processes to ensure consistency, quality, and timing. Assist with menu planning, specials, seasonal dishes, and cost control. Monitor stock levels, ordering needs, wastage, and inventory accuracy. Guide junior kitchen staff in preparation, cooking, and presentation standards. Coordinate with front-of-house staff to manage service requirements. Identify improvements in kitchen efficiency, compliance, and food quality. What We Are Looking For (Requirements) Minimum one (1) year of relevant work experience in a commercial kitchen. Relevant qualification such as Certificate III or IV in Commercial Cookery, Diploma of Hospitality, or higher related qualification. Cook Requirements Sound food preparation, knife handling, cooking, and plating skills. Good knowledge of food safety, hygiene, storage, and allergen procedures. Ability to work efficiently during busy service periods. Chef Requirements Ability to supervise kitchen workflow, quality standards, and service timing. Knowledge of menu planning, portion control, stock control, and cost management. Strong leadership, communication, organisation, and problem-solving skills.
