About the job The Bodriggy kitchen team is on the hunt for an experienced Sous Chef to join our experienced and dynamic team. Bodriggy has a purpose built kitchen focused on authentic Latin American food with a strong focus on Mexican street foods and regional specialities. Our custom built charcoal and wood burning grill is the focal point of our open kitchen! Join the kitchen management team and help ensure the venue runs smoothly Help to lead the kitchen team during prep and busy lunch and dinner services. Create a positive and professional workplace environment and culture. Supervise kitchen operations effectively and to a high standard while meeting targets; Contribute towards menu planning and development and creation of contemporary or traditional Latin American food with a Mexican influence Help develop catering menus Deliver timely and effective service of high-quality food Be responsible for managing the cost of goods and wage targets through effective stock management, including ordering, rotation and wastage control Write rosters and manage shifts Demonstrate full knowledge of all operations, OH&S, HACCP and management of the Food Safety Program A successful candidate will need to have: Relevant qualification or 3 years of relevant work experience At least 2 years of relevant experience in a similar role Ability to work in a fast-paced environment with multifaceted kitchen operations Experience in designing and implementing menus for fine dining establishments. An understanding of food costings and business management A positive and professional demeanour; This Is a full time position within our organisation.
