Position Overview The Chef is responsible for preparing and cooking a range of high-quality meals for daily service in the hotel’s restaurant and bar, as well as for in-house guests when required. The role involves hands-on cooking, supervision of kitchen staff, and ensuring that all meals are produced efficiently, consistently, and to a high standard of quality, presentation, and food safety. This position is with Mac’s Hotel, based in Portland, VIC. This is a full-time position for the right candidate. ____ Key Responsibilities • Prepare and cook a variety of menu items for lunch and dinner service, including daily specials and function catering. • Maintain smooth and efficient service across all meal periods, coordinating with front-of-house staff to ensure timely delivery of meals. • Supervise and train junior kitchen staff, providing guidance on preparation, portioning, and presentation. • Assist with menu planning and cost control, including ordering, stock rotation, and minimising waste. • Ensure all kitchen operations comply with current food safety and hygiene regulations. • Maintain cleanliness and organisation of the kitchen, equipment, and storage areas. • Monitor portion sizes, cooking methods, and plate presentation to ensure consistency. • Support the Head Chef and management team in daily operations and special events. ____ Qualifications and Experience • Trade qualification in commercial cookery or equivalent practical experience. • Proven experience working as a Chef or higher in a busy restaurant, pub, or hotel kitchen. • Strong understanding of food safety standards and kitchen best practices. • Demonstrated ability to supervise and support a team during service. ____ Skills and Attributes • Strong communication and teamwork skills. • Attention to detail and commitment to consistent quality. • Ability to remain organised and efficient in a fast-paced kitchen. • Reliable, punctual, and able to work a flexible roster including weekends and evenings. ____ Salary and Conditions • Full-time, 38 hours per week with additional hours as required. • Annual salary: $76,515 - $80,000 plus superannuation • Superannuation and leave entitlements provided in accordance with the National Employment Standards.
