About The Position The Retail Butcher role at M & G Butcher is a skilled, hands-on position within a busy retail butchery located in Chatswood, Sydney, servicing both local Australian customers and a highly multicultural community. The role involves preparing a wide range of fresh meat products for retail sale, including standard Australian cuts such as steaks, roasts, and BBQ selections, as well as customised and culturally specific preparations. These include Chinese-style hot pot slicing, finely cut meats, and Korean-style BBQ products, including marinated and seasoned items prepared to meet specific customer preferences. The position requires a high level of technical butchery skills, including the ability to perform precise cutting, trimming, portioning, and preparation of value-added meat products. The successful candidate must be capable of independently operating a range of commercial butchery equipment and ensuring all work is carried out in accordance with strict food safety, hygiene, and quality standards. As the business operates in a fast-paced retail environment, the role also requires the ability to manage multiple tasks simultaneously, including meat preparation, maintaining product displays, and providing direct customer service. Reporting To: This role reports to the Retail Manager Tasks and Responsibilities ·Preparing meat products for retail sale by deboning, trimming excess fat, and cutting, mincing, grinding, or thin-slicing meat to precise specifications for display and customer orders, including standard Australian retail cuts, marinated BBQ products, and specialised preparations such as Chinese hot pot slicing and Korean-style BBQ meats, in accordance with Australian butchery standards. ·Producing value-added meat products including crumbed cuts, marinated and seasoned items, and customised meat preparations tailored to diverse customer preferences, including Chinese-style cuts for hot pot and stir-fry dishes, as well as Australian and Korean-style BBQ products. ·Selecting and preparing meat for the production of smallgoods and processed products, including sausages, seasoned and marinated meats, and minced products, ensuring consistent quality and compliance with food safety and hygiene regulations. ·Independently operating and maintaining commercial butchery equipment, including meat saws, skinning machines, mincers, mixers, slicers, tenderisers, shredders, and specialised hot pot slicing machines, in accordance with workplace health and safety requirements. ·Preparing marinades, seasonings, and curing mixtures by accurately measuring and blending ingredients to meet product specifications and maintain consistency in flavour and quality. ·Operating sausage filling machines, smoking units, and cooking equipment to produce fresh and processed meat products for retail sale. ·Providing customer service by advising on suitable meat cuts, portion sizes, and preparation methods, including recommendations for hot pot, BBQ, roasting, and stir-fry cooking, within a multicultural retail environment. ·Assisting with daily production planning, stock preparation, and estimating quantities required to meet customer demand, particularly during peak trading periods, to support efficient store operations. Qualifications, education, experience, and abilities required: Qualifications/Education ·A relevant Certificate IV qualification in retail butchery or a related field. ·In the absence of formal qualifications, a minimum of three years of relevant industry experience may be accepted as a substitute. Experience/ Knowledge ·At least one year of relevant retail butchery experience in a fast-paced, multicultural customer environment, with the ability to meet diverse customer requirements for meat preparation and cutting styles, including Chinese, Malaysian, Korean, and standard Australian practices. ·Where no formal qualification is held, applicants must demonstrate a minimum of four years of relevant retail butchery experience. Essential Skills and Requirements: ·Demonstrated experience in a retail butchery environment (non-factory based), including carcass and primal cutting, preparation of fresh meat for retail sale, and handling customised customer orders. ·Proven ability to prepare a wide range of meat products, including standard Australian retail cuts (such as steaks, roasts, and BBQ selections) as well as specialised and culturally specific preparations, such as hot pot slicing, thin-cut meats, and marinated BBQ products. ·Strong customer service and communication skills, with sufficient English proficiency to effectively assist customers, understand requests, and provide product recommendations in a retail setting. ·Proven ability to independently operate commercial butchery equipment, including meat saws, mincers, mixers, slicers, tenderisers, shredders, and specialised slicing equipment, in accordance with workplace health and safety requirements. ·Sound knowledge of food safety, hygiene standards, temperature control, and regulatory compliance requirements applicable to retail butcheries in Australia. ·Ability to work efficiently in a fast-paced retail environment, managing multiple tasks simultaneously with minimal supervision while maintaining high standards of accuracy, safety, and product quality. ·Experience working with diverse customer requirements and handling customised orders in a multicultural retail environment will be highly regarded. Salary Below is the annual base salary to be paid, plus superannuation contributions made at the level prescribed by the Superannuation Guarantee laws, or any laws that replace them.
