Position Duties The successful applicant will be responsible for: Food Preparation and Cooking: Prepare and present authentic, high-quality Japanese dishes, including sashimi, sushi, and refined hot dishes in line with traditional kaiseki dining principles, ensuring excellence in flavour, presentation, and consistency expected at Azuma. Menu Development: Collaborate with the Head Chef/Owner in developing and refining seasonal menus, incorporating premium ingredients and maintaining the restaurant’s reputation for authentic Japanese cuisine. Kitchen Operations: Manage daily operations within the assigned section, ensuring efficient workflow, cleanliness, and organisation, while working closely with the broader kitchen team. Staff Supervision: Assist in training and guiding kitchen hands to uphold Azuma’s standards of professionalism and precision in food preparation. Inventory Management: Monitor stock levels, order high-quality ingredients, and minimise waste while maintaining cost control in line with business requirements. Quality Assurance: Ensure all dishes meet Azuma’s high-end dining standards before service, with strong attention to detail in plating and portion control. Health and Safety Compliance: Maintain strict adherence to Australian food safety regulations and hygiene standards at all times. Skills and Attributes To be considered, you will have: Advanced culinary expertise in Japanese cuisine, with a strong emphasis on kaiseki techniques and presentation Proven ability to perform in a high-end, fast-paced restaurant environment Strong time management and organisational skills Effective communication and teamwork within a professional kitchen Creativity and meticulous attention to detail Sound knowledge of food safety and hygiene regulations in Australia Salary Salary on offer is $75,000 to $80,000 plus superannuation, depending on skills and experience.
