The new concept will showcase premium Queensland produce and seafood through a modern Australian lens, delivering the same trusted hospitality. The Role We are seeking an experienced and commercially minded Head Chef to lead the launch of this exciting new Sunshine Coast venue, opening May 2026. Working closely with the owner, you will become the leader of this contemporary restaurant alongside a modern fish and chip offering. From pre-opening through to service, playing a key role in shaping the menu, team and overall culinary direction. A strong background in working with fresh, locally sourced seafood is essential, along with a genuine appreciation for Queensland produce and modern Australian cuisine. You will be responsible for building and leading your brigade, initially alongside the group executive chef for opening. You will assist in recruiting and training staff, implementing systems and procedures, and ensuring the kitchen operates efficiently. This role requires a chef who understands not only quality and creativity, but also the commercial realities of running a successful kitchen including ordering, supplier management, food costing and maintaining strong margins. As well as the modern dining offering, there is a take away element of the business, which will be providing fresh style offering to the local residents, and businesses. Skills and Experience The successful candidate will be expected to possess, but not be limited to, the following attributes: Exceptional execution and culinary production service - Modern Australian and working with Fresh Seafood is essential at a Head Chef or Senior Sous Chef level Proven ability to perform at a high level in fast-paced, high-volume environments with great business acumen Strong time management skills and the ability to work effectively under pressure Excellent leadership and communication skills, with a collaborative approach, positive attitude, and strong work ethic Strong understanding of seafood preparation and casual coastal dining concepts Relevant qualifications in Commercial Cookery, as well as certifications in food safety and hygiene Benefits and Culture Salary negotiable with performance-based bonus structure linked to agreed KPIs such as food cost targets, operational performance, and team stability Align with the venue's coastal, community-focused hospitality philosophy Long-term leadership role within a growing hospitality group Group Discounts at company venues and staff meals Flexible rostering where operationally possible NOTE - This venue is to open in early May 2026 and the start date of employment is to be at least 1 to 2 weeks prior to opening to arrange the kitchen and finalize menus, stock ordering and staffing requirements.
