The Role An exciting opportunity exists for a dynamic, up-and-coming Sous Chef or a young Head Chef to lead the kitchen and make a name in Brisbane's hotel dining scene. This hands-on leadership role is perfect for a chef with presence, passion, and a clear vision for growth. You'll balance creativity with commercial outcomes, elevating the food offering while driving performance across A la carte, conferencing, and events. Leading and inspiring the kitchen team, you'll develop seasonal, modern menus that excite guests and increase spend per head. You'll drive revenue growth through strategic menu engineering and well-structured function packages, ensuring flawless execution across daily service and large-scale events. With accountability for food costs, wage targets, and supplier relationships, you'll also collaborate closely with hotel leadership to expand the conferencing and events business and maximise overall performance.
