Set in the picturesque Blue Mountains with views of the Jameson’s valley, the Multi-Award-winning Fairmont Resort and Spa boasts 224 rooms, 8 Food and Beverage Outlets, a large Conferencing and Events department, 18-hole golf course, multiple family and wellness facilities, a 16 room Day Spa, Blue Mountains Ice-Skating Rink as well as ongoing developments About the Role As Food & Beverage Manager, you will take full responsibility for the strategic and operational leadership of: 6 Food & Beverage outlets Conference & Events operations, including weddings, corporate functions, and large-scale events You will lead and inspire a diverse team, ensure service excellence, manage budgets, and work closely with senior leadership to deliver strong commercial outcomes. Key Responsibilities Reporting to, and supported by the Executive Assistant Manager Oversee daily operations across all F&B outlets and Conference & Events Drive revenue growth and achieve budgeted financial targets Manage rostering, labour costs, and productivity in line with business needs Lead, mentor, and develop department managers and team members Ensure exceptional guest satisfaction and service standards Collaborate with the Executive Chef on menus, activations, and event delivery Working along side our Purchasing Manager to manage and support stock control, supplier relationships, and cost of goods Maintain compliance with WHS, food safety, and licensing requirements About You Proven experience in a senior F&B leadership role within a hotel or multi-outlet venue Strong background in Conference & Events operations Commercially astute with solid financial and budgeting experience Exceptional leadership and people management skills High-level organisational and communication skills Ability to manage multiple outlets and priorities simultaneously Passionate about service excellence and team development What we can offer Work with an amazing, professional and dedicated team within a supportive environment with a strong focus on your training and development.
