Earl Canteen delivers simple, honest, everyday food made fresh from scratch using quality, locally sourced ingredients. Renowned for its wholesome salads, signature sandwiches and expertly crafted coffee, Earl Canteen offers a fast yet refined café experience. Rustica brings Melbourne’s artisan bakery culture to life, showcasing naturally leavened sourdough, handcrafted pastries and exceptional coffee. Defined by time‑honoured techniques, quality ingredients and thoughtful execution, Rustica is a high‑volume specialty coffee destination, pouring an average of 60–65kg of coffee per week. Whether your strength lies in refined all‑day café service or leading a high‑volume, coffee‑driven operation, this is an opportunity to step into a hands‑on leadership role within one of Melbourne Airport’s standout venues. You’ll support the Café Manager in driving daily operations, leading engaged teams and maintaining premium service standards. Availability across a 7‑day rotating roster is required. Support day‑to‑day café operations with a focus on service excellence and consistency Lead, train and motivate a diverse team to deliver high‑quality guest experiences Champion a welcoming, professional and customer‑focused environment Maintain accurate food safety documentation and ensure compliance standards are met Drive financial performance through stock control, labour management and cost awareness Implement upselling and promotional initiatives to maximise revenue Ensure compliance with OH&S and food safety regulations Promote and uphold the quality of our food and beverage offering, ensuring staff knowledge and guest engagement More about you Proven experience in a supervisory or management role within a busy cafe or restaurant setting Victorian Responsible Service of Alcohol Certificate Strong coffee and barista knowledge, essential Energetic, guest‑focused and confident leading from the floor Skilled in team development, recruitment and performance coaching Excellent communication and organisational abilities Flexibility to work across a 7-day rotating roster The application period will close on 26/03/2026, unless a successful qualified candidate is identified sooner.
