The Role An exciting opportunity exists for an experienced Sous Chef to join a premium, high-volume steak and seafood restaurant located within one of Brisbane's most prominent dining precincts. This is a hands-on leadership role supporting the Head Chef in delivering consistent, high-quality a la carte service across lunch and dinner. The kitchen operates at a fast pace, with a strong focus on premium produce, precision cooking, and refined presentation. As Sous Chef, you will play a key role in daily operations - leading service, managing prep and production, maintaining food safety standards, and driving consistency across every section. You will mentor and develop junior chefs, set the tone on standards and discipline, and step confidently into the Head Chef role when required. A strong understanding of food costing, portion control, and labour management is essential, along with the ability to remain calm and decisive during peak periods. This role suits a technically strong chef with solid a la carte experience, particularly in steak and seafood cookery, who takes pride in running a structured, organised kitchen.
