This role is central to delivering exceptional guest experiences, driving revenue growth, and leading high-performing teams in a fast-paced entertainment environment. You’ll be responsible for the day-to-day management of the department while championing our People Brand, ELEVATE, and contributing to business transformation, asset performance, and revenue growth. Key Responsibilities Operations & Compliance Oversee daily food and beverage operations in line with company policies, procedures, and legal requirements Ensure all areas meet presentation, cleanliness, HACCP, and WHS standards Manage supplier relationships, stock ordering, goods receipting, and equipment maintenance Ensure all F&B concepts open and close on time and operate efficiently Maintain compliance with local council food inspections and internal audits Leadership & Team Management Lead, coach, and develop supervisors and team members Ensure all staff are trained in food safety, service standards, and safe work procedures Support performance management, training plans, and team engagement initiatives Be a visible role model for positive behaviour and customer-first service Financial & Revenue Performance Assist in achieving and exceeding F&B revenue budgets Complete and analyse stocktakes, wastage, variance, COGS, and gross profit Ensure accurate cash handling, invoicing, petty cash, and inventory processes Identify opportunities to maximise spend per head through upselling and product knowledge Seek new revenue streams and continuous improvement opportunities Customer Experience Deliver consistently high levels of customer service across all F&B offerings Respond to customer feedback and resolve issues professionally Create a welcoming, fun, and engaging environment for guests Monitor NPS results and implement improvements where required Sales & Local Area Marketing Execute national and local promotions and POS plans Support group bookings, events, and voucher sales Promote loyalty programs and membership growth Collaborate with management on local area marketing initiatives
