The Palace Hotel in Mortlake is a popular local venue known for its welcoming atmosphere, quality bistro dining, and strong community following. With a busy service across lunch, dinner, and functions, the hotel is seeking an experienced and reliable Sous Chef to support the Head Chef and help lead the kitchen team. This is an excellent opportunity for a motivated chef ready to step into a leadership role within a fast-paced hotel environment. Key Duties & Responsibilities Supporting the Head Chef in the daily operation of the kitchen Preparing, cooking, and presenting food to a consistently high standard Supervising kitchen operations during service in the Head Chef’s absence Assisting with menu planning, development, and seasonal updates Monitoring food quality, portion control, and presentation Assisting with ordering, receiving, and managing food stock and supplies Controlling food costs, minimising wastage, and maintaining stock rotation Training, mentoring, and supervising junior chefs, cooks, and kitchen hands Ensuring compliance with food safety, hygiene, and WHS regulations Maintaining a clean, organised, and safe kitchen environment at all times About You Relevant commercial cookery qualifications Proven experience as a Sous Chef or Senior Chef in a hotel or high-volume venue Strong leadership and team management skills Sound knowledge of food safety, kitchen systems, and cost control Ability to work a rotating roster, including nights, weekends, and public holidays What We Offer Secure full-time position Supportive management and kitchen team Opportunity to work in a well-regarded local hotel Competitive salary based on experience Fulltime Role - Salary: $80K plus super If you believe you would be a good fit for our team, please send your resume and contact details to the details attached.
