Our client is a globally recognised luxury hotel group, operating one of Sydney’s most iconic hospitality destinations. This flagship CBD property is seeking an experienced Bars Manager to take ownership of two contrasting, high-profile venues; a contemporary, event-led cocktail space and a heritage-listed bar. The Role: Reporting into the senior Food & Beverage leadership team, the Bars Manager will assume full operational responsibility for both venues, leading a team of approximately 20 across management, supervisory and bar staff roles. Managing two distinct bar operations Leading, mentoring and developing a team of 20 across both venues Overseeing a modern, event-driven cocktail venue hosting promoter-led nights and events of 300-400 guests Managing a heritage-listed bar featuring daily live music, lounge trade early week and high-volume late-night operations Thursday to Saturday Driving beverage standards, menu development and cocktail creation across both venues Implementing structure, consistency and leadership Being a highly visible, floor-based leader Managing rostering, labour costs, ordering, stock control and timecards Collaborating closely with events, promoters and wider hotel operations Candidate Profile: Proven experience as a Bars Manager or Senior Bar Manager in high-volume environments Hotel experience combined with freestanding bar exposure preferred Strong leadership capability with the confidence to implement change and uplift standards A genuine passion for beverage, from classic cocktails to contemporary, visual serves Experience managing late-night trade, live music and event-led operations Detail-oriented with rostering and payroll systems (UKG experience beneficial but not essential) Calm, credible and commercially aware - able to lead diverse teams and operations Salary & Benefits: $90,000 - $105,000 super Extensive global travel benefits Access to luxury brands at heavily discounted rates Up to 25% F&B discounts in Australia and up to 50% globally Leadership exposure within a global hotel group THE MONDAY GROUP is a specialist recruitment agency and executive search firm for the events, experiential marketing, hotel & hospitality industries.
