During peak season, the restaurant services up to 165 covers per sitting alongside steady café trade and group functions. In the off-season, you’ll focus on menu refinement, staff development, maintenance, and planning for the next season. This is a hands-on leadership role suited to a chef who enjoys service, structure, and building a strong kitchen culture in a seasonal, remote environment. Key responsibilities include: Leading daily kitchen operations across restaurant, café, bar and functions Managing seasonal rosters and mentoring a diverse kitchen team Menu creation with a focus on quality, consistency and local produce Cost control, stock management, ordering and supplier relationships Ensuring compliance with food safety, hygiene and WHS standards Collaborating closely with the Resort Manager and F&B leadership team Supporting group dining, events and functions Driving consistency in quality, presentation and service delivery About You You’re an experienced Head Chef or Senior Sous Chef who thrives in a high-volume, seasonal environment and leads calmly under pressure. You enjoy being hands-on while also building systems and structure behind the scenes.
