Position Purpose The Chef is responsible for planning, preparing, and supervising the cooking of authentic Indian and Hyderabadi dishes, ensuring consistency in quality, presentation, and taste. This role requires professional culinary expertise, strong organizational skills, and the ability to manage kitchen operations in line with Australian food safety and Halal standards. The Chef will oversee daily kitchen operations, guide staff, and contribute to menu innovation while maintaining the restaurant’s signature authenticity. Key Responsibilities Menu & Recipe Management Plan and develop menu items focusing on Hyderabadi regional cuisine, including biryani varieties, curries, tandoori dishes, and accompaniments. Standardize recipes to ensure consistency in flavor, texture, and presentation across all services. Introduce new or seasonal dishes where appropriate, maintaining the brand’s authentic culinary identity. Liaise with management regarding menu planning, food costs, and special catering requirements. Food Preparation & Cooking Prepare, cook, and present Hyderabadi biryanis (Kachhi and pakki styles), kebabs, curries, and tandoor-based dishes to a professional standard. Apply traditional Indian cooking techniques, including Dum cooking, marination layering, and spice roasting. Ensure all food preparation and cooking comply with Halal standards and meet customer dietary expectations. Monitor food quality, flavor balance, and portion accuracy at all stages of preparation and service. Kitchen Operations Oversight Coordinate kitchen activities to maintain timely service during dine-in, takeaway, and catering operations. Lead, train, and supervise kitchen staff to ensure adherence to preparation standards, hygiene, and service procedures. Implement portion control and maintain consistency in plating and presentation. Ensure kitchen workflow supports efficiency, safety, and quality during peak hours. Inventory & Cost Control Estimate food and labor costs to support efficient operations. Manage stock ordering, supplier coordination, and proper storage and rotation of inventory. Minimize wastage and ensure effective use of ingredients and resources. Maintain kitchen equipment and monitor operational efficiency. Food Safety & Compliance Ensure compliance with Australian food safety and WHS regulations. Maintain cleanliness, hygiene, and safe working conditions throughout all kitchen areas. Maintain accurate records for food safety, temperature logs, and staff training. Adhere strictly to Halal preparation standards and ensure suppliers meet certified requirements. Qualifications and Experience Minimum 1 year of experience in a commercial kitchen (experience with Indian cuisine preferred). Certificate IV in Commercial Cookery or equivalent qualification. Proven ability to prepare and cook authentic Indian and Hyderabadi dishes with consistency. Strong understanding of food safety, cleanliness, and kitchen organization. Ability to lead, train, and coordinate staff in a busy service environment. Excellent communication, teamwork, and problem-solving skills.
