Key Duties & Responsibilities: Food Preparation & Cooking Prepare and cook a variety of Italian dishes such as pasta, risotto, pizza, antipasti, soups, seafood, and meat dishes following traditional recipes and restaurant standards. Ensure consistency in taste, presentation, and portion control for all dishes. Cook sauces and doughs from scratch using authentic ingredients. Adjust recipes and seasonings according to customer preferences and dietary requirements. Kitchen Operations Set up and stock stations with necessary ingredients and cooking equipment before service. Operate and maintain kitchen equipment such as pasta makers, pizza ovens, grills, and fryers. Monitor food preparation and cooking times to ensure dishes are served promptly. Follow safe food handling and hygiene practices in compliance with Australian food safety standards. Menu & Recipe Development Assist the Head Chef in planning and improving menu items, incorporating seasonal produce and Italian culinary trends. Suggest new dishes or daily specials that align with the restaurant’s Italian theme. Maintain recipe records and portion control guidelines. Quality Control Inspect ingredients for freshness, quality, and proper storage conditions. Taste and test dishes to ensure high culinary standards. Ensure the presentation of all dishes meets the restaurant’s expectations. Teamwork & Coordination Work collaboratively with kitchen and front-of-house staff to ensure smooth service during busy periods. Train and guide junior kitchen staff and kitchen hands in basic cooking techniques and food preparation. Communicate effectively with the Head Chef and management regarding kitchen supplies and operational needs. Stock & Inventory Management Monitor inventory levels and inform management of required stock replenishments. Assist with receiving, checking, and storing deliveries of food supplies. Minimise food waste through proper stock rotation (FIFO) and portion control. Cleaning & Maintenance Clean kitchen surfaces, utensils, and equipment before and after service. Ensure the kitchen area meets health, safety, and cleanliness standards at all times. Report equipment malfunctions or maintenance issues to management promptly.
