Lead, mentor & manage kitchen staff Develop & plan menus, including reactive cooking with ingredients fished by our guests Create meals giving an exceptional guest food experience with & eye to detail Food quality control Create prep list for the kitchen crew Manage food costs & inventory Liaise with Suppliers for food orders Maintain standards for food storage, rotation, quality & appearance Directly responsible for all kitchen functions Ensure compliance with applicable health codes & regulations Interacting comfortably with all manners of clientele & crew SKILLS & EXPERIENCE Qualifications Relevant formal certifications (e.g. Certificate IV in Commercial Cookery / Kitchen Management or equivalent) Experiences At least 3 year's of direct proven experience as Chef in a full sit-down restaurant At least 2 year's experience in Italian cuisine(anywhere) Excellent experiences in entrees, pastas, steaks, seafoods and Italian desserts.
