Our client is seeking a skilled Butcher full-time. Responsibilities include: Preparing premium meats for sale by removing bones, trimming fat, and cutting, mincing, and grinding meat to size for display or customer orders. Crumbing, marinating, seasoning, and curing special cuts in line with the company's natural and additive-free standards. Selecting and preparing meat to produce smallgoods, sausages, and other value-added products. Operating machinery to grind, mix, mince, tenderise, and fill sausages, as well as using smoking chambers and cooking kettles. Preparing custom seasonings, marinades, and pickles using high-quality spices, salt, and natural ingredients. Advising customers on the suitability, cooking methods, and uses of different cuts of meat. Managing stock levels, monitoring inventory, and placing orders to maintain a consistent supply of quality meat. Ensuring all meat is stored correctly, including appropriate temperature control, to prevent contamination. Maintaining cleanliness and hygiene in the workspace, following food safety regulations and company policies. Training and mentoring junior staff in butchery techniques, processes, and food safety compliance. Qualifications and Skills: Relevant trade qualifications or certifications in butchery or meat processing. Minimum 1 - 2 years of experience as a butcher or meat processor. Expertise in meat cuts, portioning, boning, and preparation techniques. Excellent organisational and time management skills, with attention to detail. Ability to operate and maintain butchery equipment safely and effectively. Salary: The role offers a remuneration package ranging from $80,000 - $95,000, plus superannuation for a 38-hour work week.
