Ovolo Woolloomooloo is the brand's flagship Australian hotel, located in Sydney's idyllic harbourside suburb of (dramatic drum roll) Woolloomooloo. Nestled in the heart of the popular wharf precinct, a short walk to the city's central business district, the hotel is surrounded by a wide selection of much-loved dining and nightlife options. Ovolo Woolloomooloo features 100 guest rooms, a state-of-the-art gym, meeting rooms and events spaces, a swimming pool, and Bar Woolloomooloo. The Gig We are currently on the lookout for our next Head Chef to join our fun and exciting team at Ovolo! As a leader in kitchen, You will lead the kitchen team by providing the highest level of service which meets and exceeds expectations. You will manage the development and maintenance of cuisine concepts and standards for food preparation and presentation. You will manage the kitchen team to ensure a work environment which promotes the values of Ovolo and is an integral part of a profitable hotel. Your responsibilities will include but are not limited to: Direct, control and coordinate the activities of all chefs and kitchen attendants engaged in preparing and cooking food, to ensure an efficient, profitable, and smooth food service at all times. Supervise all aspects of food production to ensure established standards are maintained. Assist in buffet set up or special theme parties and participates with new ideas to improve and establish business. Develop and implement attractive menus and creates standard recipe cards with pictorials. Establish and maintain standard recipes (including photographic presentation) of all menu items in food outlets. Provide menu tasting to all F&B team. Prepare reports for budget submission as directed by the GM and monitors approved budget (departmental profit). Forecast and plan food consumption, prepare market list and grocery list to order necessary food products and control an adequate food stock. Ensure daily monitoring and control of all food purchasing, purchasing specifications and food stock control. Initiate and implement menu engineering and portion control strategies which will promote the profitable operation of food outlets. Foster high morale, minimal conflict within the kitchen brigade and provides reasons for turnover (if applicable). Conduct meetings within Kitchen Brigade and Food & Beverage service team which facilitate operational improvements. About you At Ovolo, we are all about YOU. Ideally you have at least 5 years and above work experience or similar role in hospitality Industry in a kitchen role as Head Chef level. Mastery of various cooking methods, styles, and techniques is fundamental. Creating and developing menus that are both innovative and profitable. Depending on the restaurant's focus, knowledge of specific cuisines or dietary requirements may be necessary. You will have good communications skills have the ability to remain calm and professional within a fast-paced environment.
