What You’ll Be Doing You’ll be the anchor of the floor, leading service with calm control and sharp presence. This is a hands-on role where you’ll guide your team in real time, keep energy focused, and make sure every shift runs like clockwork. From the moment doors open to the last guest departure, you’ll be setting the pace, reading the room, and ensuring every detail lands. You’ll be across every table touchpoint, drive upselling and wine engagement, and mentor new hires through consistent training and positive reinforcement. You’ll work closely with the GM on operations, culture, and team performance bringing ideas, solving problems, and elevating standards across the board. Must-Haves To thrive in this role, you’ll need at least two years in a 2IC or Assistant Manager role within a quality, high-volume venue. You must be comfortable managing services of 200 covers and capable of leading a floor with confidence and clarity. Wine knowledge is a bonus, particularly Australian varietals and you’ll know how to use it to lift both guest experience and team skills.
