About the Position The Chef plays a pivotal leadership role in our kitchen, responsible for the consistent preparation of high-quality, authentic Indonesian dishes that uphold Ria Kardinya’s reputation. This hands-on position involves overseeing daily kitchen operations, maintaining strict standards of taste, presentation and food safety, contributing to menu development while preserving authenticity, and leading the kitchen team to deliver efficient, profitable service. The role is essential to our restaurant’s success, directly influencing customer satisfaction, operational excellence and the continued growth of our Kardinya location. Key Responsibilities Preparing and cooking authentic Indonesian dishes to a high standard, ensuring consistency in taste and presentation. Planning, designing, and updating menus in line with customer preferences and seasonal availability while maintaining authenticity. Estimating food and labour costs, managing portion control, and minimising wastage to maintain profitability. Monitoring food quality, flavour consistency, and presentation standards across all dishes. Managing stock levels, ordering specialised Indonesian ingredients, and maintaining supplier relationships. Ensuring compliance with food safety, hygiene, and Work Health and Safety (WHS) regulations. Supervising, training, and coordinating kitchen staff, including assisting with rostering and performance oversight. Overseeing kitchen operations during service periods to ensure efficiency and timely delivery of meals. Collaborating with management to improve menu offerings and overall kitchen performance. Requirements Australian citizens and permanent residents are encouraged to apply. Minimum AQF Certificate IV in Commercial Cookery or higher (or equivalent). Three years of relevant experience may substitute for formal qualifications. At least one year of relevant experience in a commercial kitchen environment. Required technical skills include proficiency in authentic Indonesian cooking techniques and ingredients, menu planning and development, food costing and portion control, stock and inventory management, and strict adherence to food safety and WHS standards. Strong interpersonal skills are also essential, including effective leadership and supervision of kitchen staff, the ability to train and coordinate team members, clear communication, and collaborative problem-solving with management.
