THE ROLES We are recruiting for multiple positions across different levels of the kitchen brigade. Whether you are a seasoned Head Chef looking for a leadership role or a talented Cook ready to step up, we have a spot for you. KEY DUTIES & RESPONSIBILITIES For the Chef Role: Develop seasonal menus and calculate accurate costing for food ingredients and labor requirements, while managing supply orders to maintain optimal stock levels. Oversee every stage of food production, ensuring consistency in flavor, texture, and plating presentation across all dishes leaving the kitchen. Lead, mentor, and delegate tasks to the kitchen brigade, including Apprentices and Cooks, fostering a collaborative and high-performing team environment. Guide kitchen staff through hands-on demonstrations of advanced cooking methods and enforce standardized operational procedures. Take charge of the kitchen in the Head Chef's absence, managing workflow, troubleshooting issues, and ensuring seamless service delivery. Uphold rigorous food safety protocols and workplace health regulations, conducting regular checks to guarantee a spotless and compliant kitchen. Liaise with front-of-house Managers and service teams to coordinate meal timing, address special dietary requests, and refine food preparation strategies. For the Cook Role: Inspect all incoming ingredients for freshness and quality, and calibrate cooking equipment to precise temperature settings for optimal results. Execute the preparation and cooking of a diverse range of menu items, including proteins, sauces, seasonal vegetables, and seafood, adhering to established recipes. Master the art of plating by accurately portioning meals, applying sauces and garnishes, and ensuring every plate meets the venue's visual and quality benchmarks. Manage food storage practices, ensuring all perishables are rotated and kept at safe temperatures within refrigeration and freezer units. Maintain a pristine workstation and common kitchen areas, following strict sanitation schedules and waste management procedures. Coordinate with fellow kitchen team members to ensure a smooth, synchronized service flow, particularly during peak trading hours. WHAT WE ARE LOOKING FOR Experience: Minimum 1 year of experience in a commercial kitchen Qualification: A recognized Commercial Cookery qualification (Certificate III or IV) is highly desirable. Attributes: Ability to work under pressure in a high-volume setting. Excellent communication and teamwork skills. A positive attitude and a "can-do" approach. Reliability and punctuality.
