Job Description: Sensei Sushi Curl Curl Pty Ltd is seeking an experienced Full-Time Sushi Chef to join our team. The successful candidate will be responsible for preparing authentic Japanese cuisine, including sushi, sashimi, rolls and other Japanese dishes, while maintaining high standards of food quality, presentation, consistency and hygiene. Responsibilities: Prepare and present a wide range of sushi, sashimi, rolls and Japanese dishes in accordance with restaurant standards. Select, prepare and handle fresh seafood, rice and other ingredients while maintaining quality and freshness. Apply advanced sushi preparation techniques, including knife skills, portion control and food presentation. Assist with menu development, seasonal offerings and improvements to existing dishes in consultation with management. Maintain consistency in taste, presentation and quality of all dishes served. Supervise and support junior kitchen staff to ensure efficient kitchen operations. Monitor stock levels, assist with ordering ingredients and minimise food wastage. Ensure compliance with food safety, hygiene and workplace health and safety requirements. Maintain a clean, organised and safe sushi preparation and kitchen environment. Coordinate with front-of-house staff to ensure smooth service delivery. Requirements: Minimum of 3 years' full-time experience as a Sushi Chef or in a similar Japanese cuisine role. Relevant culinary qualifications, in Commercial Cookery Strong knowledge and practical experience in sushi preparation techniques, seafood handling and Japanese cuisine. Ability to independently prepare high-quality sushi and Japanese dishes to restaurant standards. Strong understanding of food safety, hygiene and kitchen safety requirements. Excellent attention to detail, presentation and consistency. Ability to work efficiently in a fast-paced hospitality environment, including weekends and public holidays. Salary: The role offers a remuneration package ranging from $75,000 - $88,000 per year plus superannuation for a 38-hour work week, commensurate with the candidate's skills, qualifications and relevant industry experience.
