About us Wong-derful Restaurant is seeking an experienced and dedicated Chinese Cuisine Cook to join our kitchen team on a full-time basis. This role is responsible for preparing and cooking authentic Shanghai cuisine using traditional regional cooking methods and techniques. The successful candidate will specialise in the preparation of traditional Shanghainese dishes. The role also involves maintaining food quality and consistency, supporting menu development, and training junior kitchen staff in traditional Shanghai cooking methods. About the role 1. Prepare, season and cook a wide range of authentic Shanghai dishes using traditional regional cooking methods, including handmade xiao long bao, sheng jian bao, wontons, scallion oil noodles, braised gluten (kao fu), red-braised dishes, steamed dishes, soups, and wok-based specialty cooking 2. Prepare regional specialty dishes in accordance with traditional Shanghainese culinary methods and flavour profiles 3. Examine raw ingredients and food products to ensure freshness, quality, and compliance with food safety standards 4. Regulate temperatures of steamers, ovens, grills, woks, and other cooking equipment to ensure proper cooking outcomes 5. Portion food, present dishes to a high standard, and maintain consistency in taste, quality, and presentation 6. Store food safely in temperature-controlled facilities and ensure compliance with food safety and hygiene requirements 7. Prepare dishes to meet customers’ special dietary requirements and cultural preferences where required 8. Assist in planning menus, estimating food requirements, and recommending seasonal or signature Shanghai dishes Skills and Experience Required At least 2 years of relevant full-time work experience as a Cook, preferably in Shanghai or Chinese ethnic cuisine Strong knowledge of traditional Shanghai cooking methods, ingredients, seasoning techniques, and regional flavour profiles Proven experience in preparing handmade xiao long bao, sheng jian bao, and other traditional Shanghai specialty dishes are preferred Ability to independently prepare traditional Shanghai Cuisine using authentic preparation methods Experience in high-volume commercial kitchen operations Good understanding of food safety, kitchen hygiene, and stock control procedures Ability to work efficiently in a fast-paced team environment Qualification Requirements Certificate in the filed of Cookery or relevant qualification preferred Extensive hands-on experience in traditional Shanghai cuisine may be considered in lieu of formal qualifications Proven experience in authentic Shanghai ethnic cuisine What We Offer Full-time permanent position with long-term career stability Competitive annual salary Opportunity to work in a well-established restaurant Supportive and team-oriented kitchen environment with ongoing training and professional development Opportunity to further develop specialised skills
