THE ROLE Lead all FOH operations across a two-level premium venue, setting and maintaining high service standards every service. Build genuine guest relationships and foster the kind of loyalty that makes a neighbourhood restaurant irreplaceable. Work closely with the kitchen leadership on creating a seamless floor-to-kitchen experience. Drive beverage sales across a distinctive and specialised list. Recruit, train, and develop a high-performing FOH team that understands what premium service actually feels like. Own rostering, labour management, and operational compliance. WHAT YOU'LL NEED Experience as a Restaurant Manager or senior floor leader in a premium Sydney venue. Strong food and beverage knowledge with genuine passion for the craft. Warmth and the ability to build real connections with guests. Beverage confidence across a considered and specialised list. WSET or equivalent beverage study background highly regarded but not essential. An understanding of the Surry Hills dining demographic.
