As Sous Chef, you’ll support the Executive and Head Chef in leading kitchen operations, driving food quality, and developing the team. You take ownership on shift - from service and prep to stock control and team performance - and run the kitchen confidently in the Head Chef’s absence. Key Responsibilities Oversee daily kitchen operations, ensuring consistent, efficient service Lead the team on shift - clear communication, decisive direction, calm under pressure Execute stock management: ordering, receipting, storage, and FIFO rotation Maintain food quality and presentation to Mamasan standards - taste, check, correct Support recruitment, onboarding, and on-shift coaching of kitchen team members Contribute to menu development - on-trend, seasonal, and aligned with venue identity Ensure allergen menus are current and correct across digital and print platforms Monitor food and labour costs to support profitability targets Uphold Food Safety protocols, WH&S compliance, and kitchen presentation standards What We’re Looking For Minimum 2 years’ experience in a comparable Sous Chef or senior kitchen role Strong understanding of Asian flavours, or a genuine desire to master them Confident team leader who leads by example and supports junior staff to grow Highly organised with strong prep, ordering, and stock control discipline Proactive problem-solver - you see what needs doing before you’re asked Committed to quality, consistency, and continuous improvement WHAT WE OFFER Competitive remuneration aligned with experience A progressive kitchen guided by respected, experienced leadership Real career development within the growing Mamasan Restaurant Group Staff meals, discounts and uniform A workplace where you are trusted, supported and valued HOW TO APPLY Submit your resume and a brief cover letter via SEEK.
