You will drive service standards during high-volume, premium dining services, lead the floor team on shift, and ensure every guest experience reflects the quality Mamasan is known for. You'll work closely with the Restaurant Manager, supporting, reinforcing, and sometimes setting the tone entirely. Service Leadership Lead FOH operations during service: floor flow, communication, pace Support senior management and floor staff through busy, high-volume covers Upsell with confidence and coach the team to do the same Make fast, considered decisions when service throws curveballs Handle VIP guests, service recovery, and escalated enquiries with composure Set the standard in professionalism, presentation, and guest-first thinking Team Support & Training Support onboarding, training, and on-shift coaching of FOH team members Reinforce sequence of service, food and wine menu knowledge, and service standards Deliver clear, sharp pre-shift briefings and maintain on-shift direction Motivate the team through pace, lead by example, not just instruction Operations & Standards Maintain FOH presentation to a high standard across all service periods Manage consumables, staff breaks, and task allocation Execute POS duties including opening, closing, and cash handling Ensure WH&S, food safety, allergen, and incident procedures are upheld What We’re Looking For You are calm under pressure, decisive on the floor, and take genuine pride in the standard of service your team delivers. Minimum 2 years' experience in a Supervisor or senior FOH role Background in premium, high-volume dining environments Confident communicator able to read and lead a team all service period Ability to upsell naturally and coach others to do the same Strong decision-making under pressure, you don't wait to be told Professional, polished, and genuinely people-focused Alignment with Mamasan's service philosophy and team culture Formal hospitality qualifications are advantageous but not essential. ANCHOR HOST - Full-Time Position at Mamasan This is not a standard reception role. You will manage reservations flow, coordinate seating with the floor team in real time, read a busy room, and make fast, confident decisions that keep service running smoothly. You are the link between the guest's first impression and the floor's execution. If you've managed front-of-house reception in a high-volume, premium venue and understand that the host position carries real operational weight, this role is built for you. Own the front-of-house reception, managing arrivals, reservations, and guest flow with precision Coordinate with the floor team and management to optimise seating and pacing during busy services Make real-time decisions on table allocation and wait management when the venue is at capacity Greet and engage every guest with warmth, professionalism, and genuine hospitality Handle reservation enquiries, waitlists, and special requests confidently and efficiently, primarily via SevenRooms Proactively identify upsell opportunities, private dining, premium experiences, group bookings Manage difficult situations (long waits, complaints, walk-ins during full services) with composure and clarity Maintain strong product knowledge including our food menu, wine list, and current offerings Support the Supervisor and management team with floor communication during service and be able to jump in. What We’re Looking For Demonstrated experience as a host or front-of-house reception lead in a premium or high-volume venue Confident managing reservations systems (SevenRooms experience highly regarded) Sound wine knowledge, able to speak to our list with confidence and credibility Strong communicator who can hold multiple conversations simultaneously without dropping the thread Natural ability to read guests and adjust, warm when it's needed, efficient when it isn't Decisive under pressure: you manage a full dining room without needing to escalate every call Immaculate presentation and a professional, polished manner at all times HOST - Full-Time Position at Mamasan This role suits someone who is naturally personable, quick on their feet, and understands that the guest experience starts well before they reach the table.
