We produce a comprehensive range of handcrafted breads, pastries, and sweet delights made entirely from scratch using traditional techniques and quality ingredients. Our bakehouse features a dedicated retail front where customers purchase fresh artisan products directly in retail quantities. We maintain a strong focus on organic, specialty, and high-end baked goods, and we employ a team of highly skilled and qualified bakers with specific skill requirements and significant work experience. The role We are seeking an experienced Production Manager to oversee our artisan baking operations. You will lead the production team in the creation of handmade specialty products, ensure the highest standards of artisan quality and food safety, and manage daily workflows to support our retail front and curated local partnerships. The candidate will be responsible for the following duties: ·Plan and coordinate daily artisan production schedules for specialty breads, pastries, and bespoke items to meet retail demand and selected partner orders ·Supervise, train, and mentor qualified bakers in artisan techniques including hand-mixing, hand-shaping, proofing, and baking using traditional methods ·Ensure all products meet strict artisan quality standards, recipe consistency, and specialty presentation requirements ·Monitor and manage inventory of premium raw materials (specialty flours, organic ingredients) and coordinate with boutique suppliers ·Enforce strict food safety, hygiene, and HACCP protocols throughout the artisan production area ·Oversee the operation and maintenance of bakery equipment used for artisan, small-batch production ·Collaborate with the Retail Manager to align specialty production volumes with retail demand and minimise waste ·Maintain accurate production records, batch sheets, and reporting for the Director ·Ensure compliance with WHS regulations and promote a safe working environment. The successful candidate must be enthusiastic and highly motivated and have the following skills and experience: ·Certificate III in Baking or equivalent trade qualification ·Minimum 3 years of hands-on experience in specialist or artisan bakery production ·At least 1 year of experience in a supervisory, team-lead, or management role within a specialist bakery or high-end food production environment ·Comprehensive knowledge of artisan and specialty bread-making techniques, including sourdough and handcrafted pastries ·Strong understanding of WHS and food safety regulations, including HACCP principles ·Proven ability to lead, motivate, and manage a team of skilled bakers in a craft-focused environment ·Excellent time management, organisational, and problem-solving skills ·Physical ability to work in a production environment (lifting, standing, early morning shifts) ·Flexibility to work early mornings and weekends as required by artisan production demand.
