Heron Island, nestled in the heart of the Great Barrier Reef, is seeking a skilled and motivated Cook to join our kitchen team. Key Responsibilities: Quality Control: Inspect all food items to ensure they meet freshness and quality standards; properly store perishables in temperature-controlled facilities. Cooking & Preparation: Prepare and cook a wide variety of dishes, regulate oven, grill, and other equipment temperatures, season food during cooking, and ensure precise portioning, plating, and garnishing with appropriate sauces and gravies. Dietary Accommodations: Prepare meals tailored to guests' special dietary requirements, including allergies, intolerances, and lifestyle preferences. Menu & Inventory Support: Assist in planning menus and estimating food requirements based on seasonal availability and guest numbers; monitor stock levels and assist with ordering. Team Training: Train and mentor junior kitchen staff and apprentices, sharing best practices and ensuring consistent quality. Safety & Hygiene: Maintain a clean, organised kitchen environment, adhere to all health and safety regulations, and ensure equipment is used correctly. What We're Looking For Experience: At least 3 years of experience as a cook in a high-volume or resort kitchen, with a proven ability to work efficiently under pressure. Skills: Strong knowledge of various cooking techniques, food safety standards, and kitchen equipment operation. Excellent attention to detail, time management, and ability to multitask in a fast-paced environment. Good communication skills and a collaborative approach to working with the kitchen team. Qualities: A genuine passion for creating high-quality dishes and a creative flair for presentation. A proactive, positive attitude and willingness to learn and adapt to new menus and island life. Relevant culinary qualifications (e.g., Certificate III in Commercial Cookery) are advantaged. Flexibility: Comfortable working in a remote island setting, with a flexible schedule that includes weekends, holidays and varying shifts as required.
