We are seeking a passionate and driven Assistant Food & Beverage Manager / Restaurant Manager to support the leadership of our F&B operations and help deliver seamless, memorable guest experiences. Reporting to the Food & Beverage Manager this is an excellent opportunity for an emerging leader or experienced supervisor ready to step into a broader leadership role within a dynamic hotel environment. Key Responsibilities Support the management of Food & Beverage operations across the hotel, ensuring smooth day-to-day service delivery. Maintain Mercure’s high standards of guest experience, quality, and service excellence. Work closely with the Executive Chef and F&B leadership team to deliver exceptional menus and service execution. Lead, motivate, and develop team members, fostering a culture of engagement, accountability, and continuous improvement. Assist in managing rosters, labour costs, stock control, and operational efficiency. Monitor guest feedback and assist in implementing improvements to enhance satisfaction. Support the execution of functions, events, and high-volume service periods. Ensure compliance with health & safety, food safety, and licensing requirements. Build positive relationships with guests, suppliers, and internal stakeholders.
