About the Business Sir Braxton Chocolate Bar is a busy chocolate bar and café operation located in Rockdale, NSW. We specialise in high-quality café-style dining, desserts, and chocolate-based menu items. We are committed to delivering exceptional food and service to our local community. Position Overview We are seeking a skilled and passionate Chef to join our kitchen team on a full-time basis . The successful candidate will take responsibility for daily kitchen operations, menu execution, staff training, and maintaining high standards of food quality and hygiene. Key Duties Plan and direct kitchen operations, including food preparation and cooking activities Design and develop seasonal menus in consultation with management Estimate food and labour costs, and monitor budget performance Monitor quality of dishes at all stages of preparation and presentation Manage ordering of kitchen supplies, stock rotation, and inventory control Supervise and train kitchen staff, including junior cooks and kitchen hands Maintain kitchen hygiene, food safety, and workplace health and safety standards Prepare specialised dishes, sauces, butchery, and bakery items as required Assist with rostering, cost control, and wastage minimisation Ensure compliance with local council food safety regulations Selection Criteria (Essential) Certificate IV in Kitchen Management or Diploma of Kitchen Management (or equivalent) Minimum 2 years of full-time commercial kitchen experience as a Chef or Chef de Partie or higher Strong experience in grill, pan, pasta, hot/cold larder, and dessert preparation Ability to work under pressure in a fast-paced café/restaurant environment Strong communication and team leadership skills Knowledge of HACCP food safety standards
