We are now seeking to recruit an experienced Chef and a detailed-oriented Cook who are keen to demonstrate and develop their skills to join our dynamic kitchen in South Australia. Chef: As a Chef, you will be responsible for managing the kitchen's daily operations, ensuring exceptional food preparation and presentation, and maintaining the highest standards of food quality and safety across the following tasks: Determining production schedules and staff rosters to ensure the dine-in and take away segments of the food preparation function are well-staffed across a seven-day trading week; Tailoring relevant menus with management that best reflect the desired tastes and flavours of the customer base; Monitoring the quality and timing of dishes at all stages of preparation and presentation; Estimating amounts and costs of required supplies, including raw foods and ingredients; Inspecting supplies, equipment, and work areas to ensure they meet the necessary hygiene and quality standards; Instructing and supervising kitchen staff in preparing, cooking, seasoning, portioning and garnishing dishes from the restaurant’s menus; Selecting, training, supervising & performance managing kitchen staff; Preparing, cooking, seasoning, portioning, and garnishing dishes from the restaurant’s menus; Monitoring sanitation practices to ensure kitchen staff follows the required hygiene standards and regulations. Requirements: The ideal candidate will hold a Certificate III or IV in Commercial Cookery with 3 years of relevant experience. Cook: As a Cook, you will be responsible for preparing and cooking meals, ensuring the efficient operation of the kitchen, maintaining cleanliness and upholding food safety standards as well as assisting with food presentation and supporting the team in delivering high-quality dishes across the following tasks: Washing, peeling, cutting, and seeding fruits & vegetables to prepare them for consumption; Carving and trimming foods to ready them for different dishes; Weighing, measuring, and mixing ingredients according to recipes & personal judgment; Regulating temperature of ovens, broilers, grills, and roasters; Seasoning and cooking foods according to recipes & personal judgment; Turning & stirring foods to ensure even cooking; Observing and testing foods to determine if they have been cooked sufficiently; Portioning, arranging, and garnishing dishes, and passing them to wait-staff for service; Estimating food requirements and storing foods in temperature controlled facilities; Minimising food wastage and maintaining excellent hygiene standards; Assisting in training other kitchen staff where required.
