Ranong Town is a restaurant offering Asian cuisine in Ferntree Gully, Victoria, specialising in dishes from Southern Thai cuisine which is heavily influenced by spices used in Malaysia and Indonesia and uses lots of curry paste and spices. We strive to provide an authentic taste of Southern Thailand. We require an experienced Chef with demonstrated strong knowledge of Southern Thai cuisine and authentic Southern Thai ingredients and flavour profiles, demonstrated experience in preparing traditional southern Thai dishes and working in a high-volume kitchen environment, and demonstrated ability to prepare curry pastes and sauces from scratch. This is a permanent, full-time position. You will be based in restaurant in Ferntree Gully. Key Accountabilities ● Preparation and cooking of authentic Southern Thai dishes using traditional techniques ● Preparing curry pastes, sauces and spice blends from scratch ● Monitoring food cost, portion control and minimising wastage ● Supervising kitchen workflow during peak service periods ● Maintaining consistency in taste, quality and presentation ● Assisting with menu development and recipe standardisation ● Ensuring compliance with food safety and workplace health regulations ● Liaising with suppliers to source quality ingredients Your Application : To be successful in the role, your application will need to demonstrate: Essential Requirements: ●Certificate IV in Commercial Cookery. ●Advanced Diploma of Hospitality Management ●At least 5 years of work experience as a Chef in Asian cuisine restaurants. ●Demonstrated experience preparing traditional Southern Thai dishes independently. ●Demonstrated experience preparing curry pastes and sauces from scratch ●Demonstrated experience managing kitchen operations during busy service periods ●Proven ability to manage food stock, kitchen supplies and food cost control Remuneration: Appointmentto this role will have a totalremuneration package of $87,024 comprising base salary of $77,700 plus 12% superannuation.
