Job Overview: We are in search of a committed Chef to lead our kitchen operations, guide our culinary team, and uphold a superior level of food quality and presentation. The ideal candidate will bring a hands-on approach, a passion for Modern Australian, Italian cuisine, and Mediterranean cruise and the ability to foster a collaborative and efficient kitchen environment. Key Responsibilities: · Oversee and participate in daily food production for all menu items, including pizzas, entrées, mains, and functions. · Plan and develop menus based on customer demand, market trends, and company budget. · Manage ordering, stock maintenance, portion control, waste management, and storage procedures. · Monitor production costs, menu efficiency, and profitability of menu items. · Analyze sales trends, customer preferences, and conduct special promotions to maximize revenue. · Accurately monitor stock levels, kitchen equipment, and communicate additional needs to management. · Ensure all food is prepared, cooked, and presented to a high standard and served on time. · Effectively handle and maintain kitchen equipment, tools, and appliances. · Train, mentor, and supervise kitchen staff, including onboarding new team members. · Apply and enforce food safety and HACCP systems in all areas of kitchen operations. · Maintain high standards of food hygiene, safety, quality, and preparation processes. · Review and interpret kitchen reports, audits, and documentation to address risks and compliance issues. · Enhance operational efficiency by improving kitchen policies, processes, and workflows. What We’re Looking For: · Experience in Modern Australian, Italian cuisine, and Mediterranean cruise, including functions and catering. · Chefs with solid restaurant experience and a hands-on approach are encouraged to apply. · A deep understanding of food preparation with the ability to produce high-quality dishes in-house. · Strong knowledge of kitchen hygiene and safety standards. · A well-groomed and professional appearance. · A willingness to learn Italian methods and techniques through training. Other Requirements: · Trade Certificate IV in Commercial Cookery or higher. · At least 2 years’ experience as a Chef. · Excellent communication and organizational skills. · A team player who supports a culture of teamwork. · High food standards in taste and presentation.
