Our products are baked fresh daily at our premises in McLaren Vale, taking pride in delivering great tasting food such as our multi award winning pies, various cakes, and the Vietnamese bread (banh mi) · We source all our ingredients which are produced locally in Adelaide offering the freshest products · Experience the cafe side by dining in and having your barista made coffee delivered right on your table (wheelchairaccessible) · We have catering options for functions with cocktail savouries, sweets & sandwich platters · We proudly support local charities and provide employment opportunities for those still in school What you will be doing and will be responsible for: Working as a part of the bread production line, you will be able to work with bread doughs (especially Vietnamese banh mi), many types of cakes, plenty of pies and pasties. Ideally you will have experience on the full task of a baker from mixing, moulding and baking breads. You are also responsible for making and decorating cakes (mixing, baking and pipping) based on FOH orders. Tasks include: 1. Dough Preparation & Baking Mixing & Processing: · Mix doughs according to specific guidelines and recipes · Knead, mature, cut, mould, and shape dough and pastry goods · Temperature and baking control: calculate and maintain required dough temperatures; monitor oven temperatures and product appearance to determine accurate baking times · Production: prepare pastry fillings, glaze buns/pastries, and decorate cakes (cream, icing sugar…) · Coordinate the forming, loading, baking, unloading, de-panning, and cooling of batches (bread, rolls, pastry) · Workflow: control production flow to ensure all production numbers and targets are met efficiently 2. Quality Control & Inventory Ingredients: · Check the quality of raw materials and accurately weigh ingredients before use · Troubleshooting: identify faults in doughs or products and take corrective action · Improvement: actively identify and report areas for recipe or product improvement to management · Waste management: monitor and control wastage throughout the production process 3. Equipment, Hygiene & Safety Operational Checks: · Conduct pre-operational and post-operational checks. Ensure the cleanliness of equipment and premises before production runs to comply with Occupational Health and Safety (OH&S) regulations · Cleaning: operate, clean, and grease baking trays, tins, and other cooking equipment. Ensure all machines and equipment are cleaned thoroughly at the end of every shift and prior to commencing work if required. · Maintenance: promptly report any maintenance issues or machinery breakdowns to production director. · Compliance: strictly adhere to Food Safety requirements at all times 4. Administration & Procedures Documentation: ensure all standard operating procedures are followed and record books are completed in a timely and accurate manner ‘What you look like and need to demonstrate to be successful’. · Qualified Baker with a more than 5-year experience in making both of breads and cakes, Vietnamese banh mi making being given priority · Able to work independently and manage multiple tasks · Current vehicle license and reliable transport (own vehicle) · Demonstrated history of reliable work attendance · Able to work under pressure and deadlines · Able to communicate effectively with others · Positive attitude, energetic, enthusiastic, reliable and punctual · Overtime available when required Job Type: Full-time Pay: $69,000.00 – $75,000.00 per year Work Location: In person
