Position Description: We are looking for a team of 1 Chef, 1 Cook and 1 Restaurant Manager to join our dynamic team. The ideal candidates will be passionate and experiencedand have a strong background in the field with a commitment to quality and the ability to work in a fast-paced environment across the following tasks: 1 x Chef (Full-time): Determine production schedules and staff requirements including rosters to ensure the food preparation function is well staffed across a seven-day-trading-week; Tailor a relevant menu with management that best reflects the desired tastes and flavours of the customer base; Define how dishes should be prepared and presented along with management to ensure consistency in the food preparation process; Monitor the quality of all dishes across set shifts at all stages of preparation and ingredients; Estimate amounts and costs of required supplies, including raw foods and receipt and check the freshness of delivered and stored foods and ingredients; Inspect supplies, equipment and work areas to ensure they meet the necessary standards; Demonstrate relevant cooking techniques and advise staff on menu dish cooking procedures; Prepare, cook, season, portion and garnish dishes from Bollywood Bites' menu; Instruct and supervise subordinate staff in preparing, cooking, seasoning, portioning, garnishing dishes from Bollywood Bites' menu; Selecting, training, supervising and performance managing subordinate staff; Monitor sanitation practices to ensure staff follow the required hygiene standards and regulations. Requirements: Certificate V or Diploma or relevant higher qualification in related fields Minimum 2-3 years of experience in a similar role Strong knowledge in Indian cuisine 1 x Cook (Full-time): Washing, peeling, cutting, and seeding fruits & vegetables to prepare them for consumption; Carving and trimming foods to ready them for different dishes; Weighing, measuring, and mixing ingredients according to recipes & personal judgment; Regulating temperature of ovens, broilers, grills, and roasters; Seasoning and cooking foods according to recipes & personal judgment; Turning & stirring foods to ensure even cooking; Observing and testing foods to determine if they have been cooked sufficiently; Portioning, arranging, and garnishing dishes, and passing them to wait-staff for service; Estimating food requirements and storing foods in temperature controlled facilities; Minimising food wastage and maintaining excellent hygiene standards; Assisting in training other kitchen staff where required. Requirements: Certificate III or IV or relevant qualification in related fields Minimum 1-2 years of experience in a similar role Strong knowledge in Indian cuisine 1 x Restaurant Manager (Full-time): Ensuring procedures and updates from the Director are implemented and complied with; Running the restaurant and managing front-of-house and kitchen operations; Selecting, training, rostering, supervising and performance managing waitering and kitchen staff; Organising for the purchase of goods according to set periodic budgets; Organising marketing activities including promotional menus as sanctioned by Director; Advising on menu planning in consultation with the Director and chef to best reflect the tastes of the establishment’s patronage; Meeting with guests to discuss their special function requirements and organising special functions as required; Preparing stock and resource reports, including staff control, inventory control and sales; Ensuring front-of-house and kitchen operations are clean, functional and comply with health regulations; Liaising with customers to assess their satisfaction with meals and service.
