We are seeking an experienced Restaurant Manager to lead our fine dining operation, drive commercial performance, and uphold exceptional service standards. About the Role As Restaurant Manager, you are responsible for the overall planning, organisation, and control of the restaurant’s operations. You will ensure financial performance targets are met, operational systems are maintained, and the highest standards of food, beverage, and service are consistently delivered. You will lead the front-of-house team, collaborate closely with the kitchen, and manage the restaurant as a complete business unit. Key Responsibilities Operational Management • Plan, organise, and control the day-to-day operations of the restaurant • Lead service execution to ensure fine dining standards are maintained at all times • Coordinate front-of-house, kitchen, and bar teams to ensure seamless service • Oversee reservations systems, floor plans, and service flow Financial & Commercial Oversight • Prepare and manage annual and quarterly budgets • Monitor revenue, labour costs, and cost of goods sold • Analyse financial reports and implement strategies to improve profitability • Set and review menu pricing in collaboration with ownership and kitchen leadership • Control operational expenses and drive performance against KPIs Procurement & Stock Control • Manage purchasing and supplier relationships • Oversee stock ordering, inventory levels, and stock rotation • Control food and beverage costs through effective stock management systems • Ensure accurate stocktakes and inventory reporting Team Leadership & Development • Recruit, train, supervise, and performance-manage staff • Develop senior team members and supervisors • Prepare staff rosters aligned with service needs and labour budgets • Foster a professional, accountable, and high-performance team culture Compliance & Risk Management • Ensure compliance with food safety, liquor licensing, and workplace regulations • Maintain workplace health and safety standards • Ensure accurate cash handling and POS reconciliation procedures • Maintain operational policies and standard operating procedures Guest Experience & Brand Standards • Maintain high standards of food and service quality • Resolve customer complaints and feedback professionally • Build guest loyalty through consistent and personalised service • Uphold the D.O.C brand and fine dining service philosophy Skills & Experience Required • Diploma or higher qualification in Hospitality or Business or at least 3 years' relevant experience in lieu of formal qualifications • Demonstrated experience managing budgets, stock control, and financial performance • Strong knowledge of Italian cuisine, wine, and fine dining service standards • Proven leadership and team development capability • Strong analytical and organisational skills • Ability to perform effectively under pressure • Availability to work evenings, weekends, and peak trading periods What We Offer • Leadership role within an established Italian restaurant group • Professional development and ongoing training • Competitive salary aligned with experience • Staff meals and dining benefits • Long-term career growth opportunities
