We are now seeking a talented and experienced Chef (ANZSCO 351311) to join our dedicated kitchen team, helping us create unforgettable culinary experiences for our guests. Key Responsibilities: Planning and designing seasonal menus in consultation with management, with a focus on fresh, locally sourced South West produce and seafood, including estimating food and labour costs and ordering supplies. Monitoring and maintaining the quality, consistency, and presentation of dishes at all stages of preparation and service in a high-volume waterfront dining environment. Preparing, cooking, and presenting contemporary Australian and seafood-focused dishes to a high standard, in accordance with established recipes, service timelines, and customer expectations. Liaising closely with management, kitchen, and front-of-house teams to ensure smooth service delivery and to promptly address food preparation or service-related issues. Demonstrating professional cooking techniques and providing guidance on food preparation methods, plating standards, and efficient kitchen procedures. Ensuring strict compliance with food safety, hygiene, and workplace health and safety regulations, including temperature control and safe handling of seafood products. Selecting, supervising, and training kitchen staff to maintain efficient kitchen operations, consistency of output, and high service standards during peak trading periods. Managing food storage, freezing, and preservation processes to maintain freshness, minimise waste, and support sustainable kitchen practices. Skills and Experience Required: Proven experience as a Chef in a busy commercial kitchen (minimum of 2 years). Strong knowledge of food preparation techniques, culinary trends, and kitchen management. Ability to work under pressure in a fast-paced environment. Excellent leadership and team management skills. Strong understanding of food safety practices and regulations. Ability to work flexible hours, including weekends and holidays. Certificate IV in Commercial Cookery (or equivalent). Salary Range: AUD $80,000 per annum before superannuation, based on qualifications and experience.
