Key responsibilities Production & Craft Lead the creation of premium chocolate products including bonbons, pralines, bars, and seasonal ranges. Set and maintain exceptional standards across tempering, moulding, enrobing, finishing, and presentation. Oversee ingredient quality, consistency, and batch integrity across all products. Scale & Systems Lead the transition from small-scale production to a scalable, repeatable manufacturing model. Help redesign workflows, layouts, and processes to support efficiency, throughput, and growth. Work closely with leadership to evolve the factory into a fit-for-purpose production environment. Leadership & Team Development Lead, mentor, and develop a team of chocolatiers and production staff. Set clear expectations, train best practice techniques, and foster a culture of quality and pride in craft. Manage production planning, runs, and resourcing in line with business demand. Quality, Safety & Standards Ensure strict adherence to food safety, hygiene, and WHS standards. Maintain documentation, procedures, and quality controls appropriate for a growing operation. Innovation & Growth Contribute to new product development and refinement of existing ranges. Stay informed on industry trends, techniques, and equipment relevant to premium chocolate production at scale. About you You are an experienced chocolatier who is ready to step into a leadership and transformation role . You bring: Strong technical expertise in chocolate making, including tempering, moulding, enrobing, and finishing. Proven experience working with premium couverture and high-quality ingredients. Experience leading or mentoring others in a production or kitchen environment. A systems mindset — able to think about workflow, efficiency, consistency, and scalability. A deep respect for craftsmanship, balanced with a practical approach to production. Excellent attention to detail and commitment to quality. The confidence to take ownership, make decisions, and guide a team through change. Flexibility, adaptability, and resilience in a growing business environment. Previous experience in a senior chocolatier, head chocolatier, pastry, or production leadership role is highly regarded.
